I'll state what is probably obvious, which is that many life insurance companies have a pilot exclusion clause.  Read the policy carefully.

I think United of Omaha offers policies with no aviation or pilot exclusion.

Another item you can look for - some companies have a "return of premium" option which refunds to you all premiums paid at the end of the term (unless you already collected the benefit).
