Different fluids are designed to withstand different temps, and there are lubrication considerations. Different fluids for different jobs.

You don't put diesel inyour gas car do you?

Lubricants are to carry heat away from components where friction generates heat, usually bearings.

Engine oil is designed to run off hot bearings quickly. 
Gearbox oil is designed to stick to gear faces. 
You can see this effect by cutting the top off a can of engine oil and gear oil when they're empty and seeing how the different oil run off the can walls. The Engine oil can is very clean after just a few minutes. 

As to how they're used depends on the aircraft manufacturer. 
One oil for the whole aircraft is just a safety feature so people don't put gear oil in the engine.

4 things in Eng. or GB

1.Lubricates.

2.Cools or in Turbine FW it goes through Oil Cooler/Fuel Heater.

3.Cleans.

4 Seals

Is oil in the Fetzer Valve. Otherwise there's not enough oil to lube the ball bearings.
