I hate to say it, but I'm actually enjoying the upheaval in this industry. It's reminiscent of the days of the union drive in the Gomex. While it's bitter sweet to see the money finally on the rise in my last years of flying, I'm actually glad for those just starting out. This career path wasn't worth the stress and strain on my wife and family. The over 1000 weekends at work over these last decades was not worth it.

Retiring, safety jobs, fixed wing transitions, non-flying aviation or aviation mx related jobs, getting degree and going different direction, or making their side-gig into their full-time job. LOTS of options to make better pay and schedule. Gotta listen to wisdom from old-timers, think about your future and where your career fits (which may be fine and dandy where you're at right now), and think about what gets you to retirement without sacrificing your family completely along the way.

I only know one guy that went to the airlines and I haven't worked with him for years. There are not lots of options to make 100k plus like you will as a pilot. You will be starting over and that means low pay.

I went to an MRO company as former aviator (not a mechanic) and make 100+. Was offered a 150+ job offer as a drone supervisor position that wanted former aviators (I wasn't willing to move though). You do have to be able to write a good resume and think how to market skills you built as a leader in the cockpit or your organizations over the years. Be patient, keep trying, and always keep searching and you'd be surprised what's out there.

I'm deluged with company emails daily, begging for anyone to work overtime shifts. Everywhere.

It's because it's such a great, simple job and they just throw money at you? Seems like that'd be a lot easier to fill the dozens of openings than it apparently is. ...or maybe you're just wrong?
