I haven't flown since Dec of 2020. What is the best way to get current again?

Go to the airport and get a BFR at the heli flightschool. If you have a lot of experience in HAA and are returning to it the company will probably hire you, as you will get about 8 hours in the initial course.

Suppose you don't have EMS experience? Should I get an ATP as a means to refresh? I checked with the local flight school and they're charging $750/hr for an R44.

If you're trying for AMC, you will need 135/Military experience in the last 2 years.  Now, if you want to work for AMC go get a 91 cfr BFR.  Then apply.  Take whatever job they offer (they are need pilots) at whatever salary they offer.  Once you finish training you have 135 experience.  Then apply for wherever you want to work.  I know of a former AMC pilot who hadn't flown in 3+ year that was hired.
