Does the OpSpecs of a Part 135 operator list the names of the Check Airmen?

If not, is there any official document that does?

It is not normally on the Ops Specs, but the FAA does issue an authorization letter to the company listing each check airman.

Well there is an LOA (letter of authorization) issued by the FAA.  
And there should be an 8410 form filled out on your check airman check ride that you should have access to but are not required to sign it. 
And of course the FAA and your company both keep a check airman file on you as well as the FAA enters your information into their PTRS-SAS system.   
The 8900.1 document will explain in detail.

But a check airman will not be in the OpsSpecs because they are not in a FAR 119 position.  DO, CP or DM.

You are clearly unfamiliar with what an OpSpec or OpsManual are.

And (as a pilot) how could you be unfamiliar with who your own company's check airmen are?

Maybe he is looking to see is listed as a Check Airman at another company that he may or may not want to work for.

You assumed he wanted to know who his own company's check airmen were.

You know what happens when you assume.
