Plenty of us can and many of us do it regularly.

Unfortunately plenty of us can't too.  And if you've never experienced it before, it's a tough lesson to learn accidentally.  Many people have no idea just how serious going inadvertent IMC is.  Unless you're up on instrument flying you're likely to fail.

As an instructor, I used to regularly set my students up for failure.  We'd go out on a clear blue sky, with 1 puffy cloud off in the distance.  I'd have them fly a heading and climb attitude to intercept that cloud, without telling them.

Everyone one of them would fly directly into the cloud and when everything went white they all paniced and couldn't believe they had just flown into a cloud.

It was an invaluable experience in many ways.

So yeah, you're right, it shouldn't be happeneing, but I get how people can do it regularly.
